Stuffed brinjal using Microwave



I barged in through the door and sunk into the sofa stretching my legs.These are the typical saturdays after our walmart shopping.'V' just finds it awkward sitting in those carts,nevertheless his strollers too:).Hardly 10mts,he just squeezes himself to jump out.As partners ,his parents share the task of running and shopping too.
On these days i just lay hands upon some easy yet tasty recipes like this one.Hardly any time to browse ,i gave it a try recollecting the video i went through days ago.It was worth it.....
Ingredients:-
Brinjals:4nos.
Onion: half cup cut in to small sizes
coriander leaf:palmful
peanut powder:4tbsp
jaggery:1tbsp
salt to taste
ginger:1tbsp
chilly powder:1/2tbsp
tadka items:-
oil
mustard seed:1tsp
turmeric powder:a pinch
hing(asafoetide):to taste

procedure:-
Cut the brinjals criss cross.That is,remove stem,make a cut till 3/4th.turn other side and cut till 3/4th in opposite direction.
Mix peanut powder,half coriander leaves,chilly powder,salt,jaggery,ginger.apply this to both sides of brinjal.
Place this in microwave safe bowl.Mix onion and coriander leaf and add on top of these brinjals.Do the tadka separately and pour on top of this .spray some liquid on top just for conditioning it.
microwave for 10 minutes.Then ,let it remain in microwave for another 5 minutes.Take out and have a good meal with rice or chappathi.
