GOLI BAJE



Maida- two and half cups
Urad dal:half cup
onion-two medium sized cut into small bits.
greenchilly-2 tbsp
curryleaf- one stem cut into tiny bits
A pinch of baking powder

Urad dal should be soaked and ground to fine paste.Add to maida along with rest ingredients.
Nicely put in oil and deep fry it.

ARAN NUMBER(DIAMOND CUTS)



DIAMOND CUTS:
maida:4 cups
till:2tspn
salt:to taste
ghee:3tbspn

Add water to maida and make a dough by adding all ingredients.Once done,roll into chapathi shapes(not too thin).Make criss cross lines using a knife into diamond shapes.Deep fry it.

Kaipakka achar(bitterguard pickle)





We all love this achar very much.Bitterguard is very good for health and tastes very nice too.A spoonful of achar ,along with vishu sadhya makes it complete.I cannot exactly give the measurements but what i can do is add pictures of the cut ingredients.Add chilly powder according to preference.We added generously as in pickle.

Bitterguard:cut into small pieces.Salt it well and keep it for 2hours for good salt absorption.
curry leaves:8 stems
mustard seeds: 3tbspn
methi seeds:2tbsp.
red chilly:4 medium sized cut into pieces.
ginger-garlic-greenchilly-cut into small pieces.
tamarind juice:thick pulp
red chilly pwdr:1 cup
jaggery:2tbsp








method:
In gingelly oil,put mustard seeds and let it splutter.Add uluva seeds,curry leaves,ggchilly and nicely saute it.Add red chilly also.Once done add chilly powder.Once raw smell goes add kaipaka.Close lid and let it soften for 5 mts.Add tamarind pulp and close lid again.Once bubble arises in medium heat,Switch off stove and allow to cool.
